Quintessentially British, we’ve proved ourselves a nation of gin lovers and our taste for the juniper juice shows no sign of slowing.

66 million bottles of gin were sold in the UK in the last year according to the Wine And Spirits Trade Association – up 41% on the year before – as consumers develop a taste for fruit-flavoured gins and gin liqueurs, blooming botanicals and exciting new taste combinations.

And, as you’d expect, the Dock has plenty to offer when you’re looking for somewhere to eat and drink in Liverpool. We’ll soon boast our own unique gin bar from craft distiller Turncoat, creator of our exclusive Albert Dock gin.

But, in the meantime, we took the opportunity to visit some of our favourite watering holes and put together this irresistible gin cocktail menu.

Prepare for... Supersonic gin and tonic at Revolucion de Cuba

You’ll be feeling supersonic with this gin and tonic from Revolucion de Cuba. It uses Bombay Sapphire gin with Fever Tree Refreshingly Light tonic water as its base, but there’s so much more to it than that. The Supersonic is topped with a boozy strawberry lemonade sorbet, infused with more mouthwatering Bombay Sapphire. It’s sweet, refreshing and goes down seriously fast. Don’t say we didn’t warn you…

Gusto’s taste of the Mediterranean

Gusto’s signature cocktail is the zesty Blood Orange. It’s simple, classic and packed with the tastes of Italy. It combines Beefeater blood orange gin with orange, rosemary and Fever Tree Mediterranean tonic for a refreshing, botanical burst. A delicate orange colour with vibrant aromatic rosemary, this will instantly transport you to the tastes of summer.

Swing in to Lunyalita’s Spanish gin bar

Lunyalita’s speciality Spanish gin bar is one the biggest outside Spain, with a range that the Lunyalita team is always adding to. Its bestselling gin cocktail is the classic G&T, chosen from its vast range of scrumptious Spanish gins. All gins come over ice, with their own bespoke garnish, in a large balloon glass and doubles come with a free Fever Tree or Vichy Catalan tonic. If you’re heading down with friends, Lunyalita runs a 2-4-1 offer on Larios Gin from Monday to Friday 4-6pm, so buy a double Larios Gin and tonic and you’ll get a second one free.

Peaberry’s signature gin cocktail is its Primavera, Italian for spring. This fresh and fruity number mixes Mother gin with Campari, William Fox orange and Shiraz. If you’re a fan of an Aperol Spritz we think you’ll love a Primavera, which is bitter, sweet and orangey.

Talk about a Revolution

Revolution’s cocktails are so tasty we couldn’t choose our favourite from these three unique tastes. Fruity gin fans will love the Rosie and Gin, with its base of Aviation gin alongside strawberry, pineapple, raspberry and Fever Tree’s Refreshingly Light elderflower tonic water. If you’re in the market for something a little more exotic, may we point you in the direction of the Oriental Spritz? The delicious Japanese craft gin Roku contains six Japanese botanicals alongside juniper, coriander and cinnamon. Or head to Italy with a Limoncello Spritz. This citrusy concoction combines Tanqueray gin with limoncello, prosecco, apricot, lemon, lime and mint.
